Week of 2/24: Recipe Roundup!

This week on Instagram stories, I asked if you all would be interested in me sharing the dinner recipes I make on a weekly basis. The response was an overwhelming YES!

I’m so excited to share because I know I am always looking for easy, quick, healthy meal ideas. It’s easy to get bored or get into a rut with the same recipes each week!

Below is a recap of this past week’s recipes. Leave any questions in the comments 🙂

*Breakfasts:

Almost every day this week my breakfast was a green smoothie! Below is my go-to recipe. It’s the perfect combo of protein, fat, fiber and leafy greens to start your day off strong and keep you full until lunchtime!

  • Spinach
  • Nut milk (I usually make my own!)
  • 1/4 avocado
  • 1 scoop Vega Protein and Greens (I alternate between the vanilla and chocolate)
  • 1 scoop collagen peptides (I used Vital Proteins)
  • 2 scoops inulin powder (this is basically pure fiber)
  • Ice

*Lunch:

Most days I have dinner leftovers from the night before, eggs with avocado, or a salad of some sort for lunch. But one day this week I made a really easy chicken salad recipe! Below is the recipe. I didn’t really measure anything– just eye ball it to your liking:

  • Rotisserie chicken, or the cooked chicken from Trader Joe’s
  • Approximately 1 tablespoon of Primal Kitchen mayo
  • Small handful of dried cherries (you could also use cranberries, I just prefer cherries because they have no added sugar)
  • Some chopped up celery
  • Chopped walnuts
  • Salt and pepper
  • Optional: purple grapes or apple

Combine everything in a bowl. Eat plain, over spinach, or on toasted whole grain bread!

*Dinners:

Sunday: Crockpot Chicken Chili. I don’t usually follow a recipe for chili and my sister Gina made this one, but here is a great recipe!

Monday: Homemade chicken stir fry with frozen veggies. I buy the big bag of Birdseye frozen stir fry blend veggies on a weekly basis– it’s a great blend with a ton of different veggies and big pieces of broccoli which I love! I cubed the raw chicken and cooked it in a non-stick pan with garlic, EVOO, salt and pepper, and some coconut aminos. If you’ve never used coconut aminos, they’re a much healthier alternative to soy sauce! I then did the same with the veggies in my big wok until they were cooked through. Toward the end, I added two eggs and scrambled them up with the veggies and combined everything at the end. Top with a little sesame oil and some sesame seeds and voila!

Tuesday: Indian night! I made shredded chicken in the Instant Pot with chicken bone broth, salt and pepper, and a poultry blend of fresh herbs (you can usually find this in your produce section). While that was cooking, I made two boxes of Trader Joe’s frozen Channa Masala (basically a mixture of chick peas, tomatoes, garlic, onion, etc…SO GOOD). Once both were cooked, I combined the two with cauliflower rice.

Wednesday: Taco bowls! I love to make taco bowls when I have some produce in the fridge that needs to be used. I switch up the mixture depending on what I have on hand, but this one was spring mix (could also use regular shredded lettuce), cauliflower rice, ground turkey cooked with taco seasoning and some tomato sauce, guacamole to-go packets (Trader Joe’s), Zhoug sauce (super delicious spicy sauce also from Trader Joe’s), sautéed red bell pepper, fresh tomatoes.

Thursday: Creamy Sausage Tomato Basil Spaghetti Squash. I actually used the Al Fresco Chicken Sausages in the sweet Italian flavor for this (one pack has 4 links in it– I used about 5 and gave the boys a couple for their dinner)! I just removed the casings and chopped up the chicken sausage. Since it’s fully cooked I just warmed it in the pan with the onions as the first step!

I also didn’t combine everything at the end and bake like it says to. I finished the sauce and once the squash was done, I just shredded it and added it to the pan with my sauce! I’m really impatient and get hangry around dinner time 🙂 But it was delicious and cut down on a lot of the cook time.

Friday: Went to Whole Foods and got a random assortment from the hot bar! I did the brown rice, the white fish, some roasted veggies and cajun sweet potatoes! I love to go to Whole Foods when I’m not in the mood to cook. I know they’ll have healthy but delicious options, and the kids love to play in their little play area while we eat.

Saturday: We were going to go out to eat but then we decided to order Bibibop instead! I typically get the chicken bowl with purple rice and lots of veggies. Instead of using their heavy sauces, I just put some coconut aminos on top at home.

Sunday: We are cooking out with the family tonight for my dad’s birthday! We’ve had grilled chicken and shrimp marinating and made lots of yummy sides like salad, pasta salad, baked beans, potato salad etc. Acting like it’s summer even though it’s pouring snow 🙂

*Dessert:

I am planning to try to make these paleo lemon bars for dessert– will let you guys know how they turn out!
